The Rosselli – AX Privilege has been the talk of the town since it opened its doors for different reasons. Not only is it the latest addition to the success story of AX Group, but also is home to Valletta’s innovative new restaurant, Grain.

The full concept includes three different sections:

  • Grain Street (the bistro at street level);
  • UnderGrain, and
  • OverGrain

The team behind the restaurant wanted the place to be everyone’s local for a quick bite, cheeky coffee meeting or that post-work drink. The menu is a perfect embodiment of the aspect of chefs and tailors creating a meal worthy of a unique dining experience.

Grain has also thought of accommodating all tastes and occasions. Grain Street offers a classic choice for breakfast, lunch or dinner. The street level is your classic call-in for a classy breakfast, lunch or dinner. UnderGrain is your go-to for all things refined, with a more intimate approach to dining. For those after a meal with a view, the restaurant’s rooftop setting is the perfect spot.

Speaking to Mediterranean Observer, AX Group Hospitality Director Claire Zammit Xuereb explained that the company is always searching for new ways to intrigue guests, allowing them to to savour the full experience through creative concepts like the one found at Grain.

“Enabling our guests to enjoy a casual lunch and a refined dinner in the same space is unusual, yet we wanted to provide our guests with the ability to enjoy different experiences. This extends far beyond solely the food on offer – every detail is key to providing the best possible service; from the culinary options, to the ambience we create through choice of décor and accompanying music – because the four pillars of food, service, ambience and value for money are all to be prioritised.

More importantly, we have uniquely pinned ourselves to the analogies of a tailor, as we find that there are many similarities in both crafts. At a time when automated creations are rapidly changing services, we chose to embrace the true skills honed by humans – both in tailoring, and our culinary creations. We also believe that in order to provide the curated service found at Grain, all staff must first appreciate that a guest has chosen our restaurant to dine; that they have carefully selected us to take care of their breakfast, lunch or dinner.

We always aim to be on the forefront of innovation on the island.
